A Few Simple Facts to Remember:

Today's bakeries, unlike the facilities of thirty years ago, are:

  • more hygiene conscious and better educated in food handling and food safety.
  • have high levels of regulatory awareness as well as consumer awareness and education.
  • are more customer friendly, versatile and innovative.
  • focused on customer service. Most now provide table service, coffee and light snacks.

In just a few simple steps you can produce gluten free products...

  • Validation via laboratory testing will provide in-house and consumer confidence in your business.
  • Its good practice to schedule the manufacture of allergen free products first.
  • Smaller Bakeries - only a dedicated bowl and wooden spoon is needed. There's no need to worry about having a dedicated mixer. Wholesale Bakeries (or producing larger volumes) - we recommend to use a dedicated mixing bowl for your mixer.
  • For baking - a dedicated set of tins may be used, or simply use baking paper or foil to help avoid cross contamination.
  • There's no need to worry about oven usage because gluten contamination is not an issue.
