Egg Free Pancake

This Recipe is Gluten Free, Wheat Free, Soya Free, Nut Free, Egg Free and Dairy Free.

Ingredients
Makes 
12 Pancakes
  • 1½ cups (250g) Premium Self Raising Flour Mix
  • 1¾ cups (440ml) water
  • 2 heaped tablespoons (50g) soft margarine
  • ½ cup (80g) of icing sugar (reduced sweetness use ¼ cup)

Method
  1. In large bowl combine water, margarine and icing sugar, add flour mix. Using a whisk combine ingredients until mixture is smooth.
  2. Allow to rest for 5 minutes.
  3. Use a ladle to spoon mixture into a lightly greased frying pan and cook for about 1 minute on each side or until golden brown.
Additional Tips

Try pancakes with baked ricotta, pecans, bananas, and gluten free maple syrup. If you are lactose intolerant use a dairy free yogurt. For thinner pancakes, use 2 cups of water.
