Get this versatile gluten free biscuit recipe that allows you to create a variety of cookies, short bread, melting moments and more.

What you need for this gluten free biscuit recipe
  • 1 packet (400g) Premium Biscuit Mix.
  • 175g cold margarine
  • 50g filling
If using butter
  • 1 packet (400g) Premium Biscuit Mix.
  • ¼ cup water
  • 125g butter
Method 
  1. Preheat your oven to 190°C (175°C fan forced)
  2. In a large bowl combine margarine and biscuit mix OR Butter, water and biscuit mix. Mix by hand, until the dough comes together.
  3. Fold in your favourite filling and stir to even distribution.
  4. Roll spoonfuls of the mixture into balls, place on lined tray. Flatten slightly. Set to bake for 24 -29 minutes.
  5. Remove from oven and leave on the tray to cool.

For Melting Moments (Makes 22) – roll into balls, and then press into shape with a fork. Set to bake 20 -24min. (Click here for melting moment filling recipe)

For Short Bread (Makes 14) – roll out the dough about 6mm thick; then use cutter to shape. Set to bake 20 -24min

Best stored in an airtight container.

Icing for shortbread – 2 cups icing sugar, 6-8 tablespoons lemon juice. Mix well.
