We have been having fun cooking this week and I have made a cake I think you and your customers will like.

Gracies Lamington Train Cake

Gracies Lamington Recipe

We used the sponge mix and made a novelty birthday cake, a lamington train cake! I chose the train cake because i had this as my birthday cake at the age of 2 and loved it! I also love lamingtons.

We made the Well & Good Sponge/Swiss Roll Mix according to the directions. The only thing we did differently was that we doubled the recipe and used a bigger cake tin so we made sure we had enough cake for the train. We then cut the cake into different sizes for the train and followed Sam’s lamington recipe when it came to icing the cakes and putting coconut on them. I love chocolate so we did not make any pink lamingtons, although this might be an idea for a girls train cake!

After the icing had set we began putting all the lollies and biscuits on to decorate the cake and make it look like a train. You can find heaps of gluten free lollies these days at the supermarket, just make sure you read the fine print under ingredients. We also found some chocolate biscuits we used as wheels and I added a lolly with icing to give it some colour. We cut out a square in each caboose and then filled it with lollies.

 

I can tell you it tasted great!
