April/May Competition Winner

Our Facebook page has been inundated with entries for our April/May competition. I'd say it’s the biggest one yet with 17 entries. We love it!

A big congratulations to all but especially our winner Catherine who had 75 likes for her gluten-free lemon tarts. They truly were a hit amongst our growing Facebook community!

Blueberry Muffins

These Muffins are Gluten Free, Wheat Free, Soya Free, Nut Free and Dairy free.

Ingredients
Makes 
10 Muffins
  • 1 packet (450g) Well and Good Muffin Mix.
  • 2 Eggs
  • ½  cup (125ml) of oil
  • ½  cup (125ml) of water
  • 1 punnet of blueberries

Method
  1. Preheat your oven to 185°C (170°C fan forced) 
  2. Grease or line 10 cup muffin tray.
  3. In a large bowl combine Muffin mix with water, oil and eggs, mix well until all ingredients are well combined. Fold blueberries into the batter.
  4. Spoon the mixture into muffin tray and set to bake for 28-35 minutes.
  5. Rest for 5 minutes in tray then cool on a wire rack.
